It's creamy, flavorful, and packed with the goodness of fresh tomatoes. Plus, it's so easy to make that you'll want to add it to your regular rotation of meals. So let's get started!
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups fresh tomatoes, diced
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional toppings: croutons, grated cheese, chopped herbs, etc.
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
