Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 can (15 ounces) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- Rinse the quinoa thoroughly under running water. In a medium saucepan, bring the quinoa and water or vegetable broth to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
- In a large bowl, combine the cooked quinoa, black beans, red bell pepper, red onion, cherry tomatoes, avocado, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.
- Serve the quinoa salad immediately, or refrigerate for later.
