Healthy and Flavorful Quinoa Salad Recipe

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Rinse the quinoa thoroughly under running water. In a medium saucepan, bring the quinoa and water or vegetable broth to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
  • In a large bowl, combine the cooked quinoa, black beans, red bell pepper, red onion, cherry tomatoes, avocado, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.
