Goulash Recipe (Hungarian Traditional Dish)

Ingredients:
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup sour cream
  • Chopped fresh parsley for garnish
Instructions:
  • In a large pot or Dutch oven over medium-high heat, heat the vegetable oil. Add the beef cubes in batches and cook until browned on all sides. Remove the beef cubes from the pot and set aside.
  • Add the chopped onions to the pot and cook for 2-3 minutes until softened.
  • Add the minced garlic, sweet paprika, caraway seeds, dried thyme, bay leaf, salt, and pepper to the pot. Stir everything together and cook for 1-2 minutes until fragrant.
  • Add the beef broth, diced tomatoes, and browned beef cubes to the pot. Stir everything together and bring the mixture to a boil.
  • Reduce the heat to low and cover the pot. Simmer the goulash for 1 1/2 - 2 hours until the beef is tender.
  • Add the chopped green and red bell peppers to the pot and cook for another 10-15 minutes until the peppers are tender.
  • Stir in the sour cream until it's fully incorporated into the goulash.
  • Garnish the goulash with chopped fresh parsley and serve with boiled potatoes or egg noodles.
