- 2 tbsp vegetable oil
- 2 onions, chopped
- 2 garlic cloves, minced
- 2 tbsp sweet paprika
- 1 tsp caraway seeds
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1/4 cup sour cream
- Chopped fresh parsley for garnish
Instructions:
- In a large pot or Dutch oven over medium-high heat, heat the vegetable oil. Add the beef cubes in batches and cook until browned on all sides. Remove the beef cubes from the pot and set aside.
- Add the chopped onions to the pot and cook for 2-3 minutes until softened.
- Add the minced garlic, sweet paprika, caraway seeds, dried thyme, bay leaf, salt, and pepper to the pot. Stir everything together and cook for 1-2 minutes until fragrant.
- Add the beef broth, diced tomatoes, and browned beef cubes to the pot. Stir everything together and bring the mixture to a boil.
- Reduce the heat to low and cover the pot. Simmer the goulash for 1 1/2 - 2 hours until the beef is tender.
- Add the chopped green and red bell peppers to the pot and cook for another 10-15 minutes until the peppers are tender.
- Stir in the sour cream until it's fully incorporated into the goulash.
- Garnish the goulash with chopped fresh parsley and serve with boiled potatoes or egg noodles.
