Coto Makassar Recipe

  • 1 lb of beef, cut into small pieces

  • 2 stalks of lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 inch of ginger, grated
  • 4 cloves of garlic, minced
  • 2 tsp of coriander powder
  • 2 tsp of cumin powder
  • 1 tsp of turmeric powder
  • Salt and pepper, to taste
  • Sambal, to serve (optional)
  • Lime wedges, to serve (optional)
  • Fried shallots, to serve (optional)
  • In a large pot, bring 8 cups of water to a boil.
  • Add the beef and offal to the pot and cook for 15-20 minutes, or until they are cooked through.
  • Remove the beef and offal from the pot and set them aside.
  • In a small bowl, mix the rice flour with 1/2 cup of water until it forms a smooth paste.
  • Add the rice flour paste to the pot and stir to combine with the broth.
  • In a separate pan, heat the cooking oil over medium heat.
  • Add the lemongrass, kaffir lime leaves, ginger, and garlic to the pan and cook for 1-2 minutes until fragrant.
  • Add the coriander powder, cumin powder, turmeric powder, salt, and pepper to the pan and stir to combine.
  • Add the spice mixture to the pot with the broth and stir to combine.
  • Return the cooked beef and offal to the pot and let the soup simmer for 10-15 minutes, or until it thickens slightly.
  • Serve the Coto Makassar hot, topped with sambal, lime wedges, and fried shallots if desired.
