Ingredients:
- 500 grams boneless chicken, cut into cubes
- 2 tablespoons sweet soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon water
- 1 tablespoon honey
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon turmeric powder
- Salt and pepper to taste
For the peanut sauce:
- 1 cup roasted peanuts, ground
- 3 cloves garlic, minced
- 1 small onion, minced
- 2 tablespoons vegetable oil
- 2 tablespoons sweet soy sauce
- 1 tablespoon tamarind paste
- 1 tablespoon honey
- 1/2 teaspoon chili powder (optional)
- 1/2 cup water
Directions:
- In a bowl, mix together the sweet soy sauce, vegetable oil, water, honey, coriander, cumin, turmeric powder, salt, and pepper. Add the chicken cubes and mix until evenly coated. Let marinate for at least 1 hour or overnight.
- Thread the chicken onto skewers and grill or broil for 5-7 minutes on each side until cooked through.
- To make the peanut sauce, heat the vegetable oil in a small saucepan over medium heat. Add the garlic and onion and sauté until fragrant. Add the ground peanuts, sweet soy sauce, tamarind paste, honey, chili powder (if using), and water. Stir until well combined and bring to a simmer. Cook for 5-7 minutes or until the sauce thickens.
