Chicken Fried Rice Recipe
Ingredients:
- 2 cups cooked rice
- 1 chicken breast, cut into small pieces
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 carrot, peeled and diced
- 1/2 cup frozen peas
- 2 tablespoons vegetable oil
- 2 eggs
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions:
- Heat a large skillet over medium heat and add 1 tablespoon of oil. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the skillet and set it aside.
- Add another tablespoon of oil to the skillet and add the onion, garlic, and carrot. Cook for 3-4 minutes until the vegetables are tender.
- Push the vegetables to the side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they are fully cooked.
- Add the frozen peas to the skillet and cook for 1-2 minutes until they are thawed.
- Add the cooked rice and soy sauce to the skillet and stir everything together until the rice is heated through and evenly coated with the soy sauce.
- Add the cooked chicken to the skillet and stir everything together. Cook for an additional minute or two until everything is heated through.
- Season the fried rice with salt and pepper to taste. Serve hot.
